Ingredients
· 1-ounce Aviation American gin
· ¾ ounce grapefruit juice, freshly squeezed
· ¾ ounce lime juice, freshly squeezed
· 1-ounce pineapple syrup
· 3 dashes Peychaud’s bitters
· 2 ounces dry prosecco
Steps
· Add the gin, pineapple syrup, grapefruit juice, lime juice and bitters into a shaker with ice and shake until well-chilled.
· Strain into a chilled flute
· Top with the chilled prosecco.
2. Land of Happy
Land of Happy cocktail is a sweet, herbaceous acidic cocktail, made from mixing a syrup, White balsamic vinegar, white wine .
Ingredients
· 1 ½ oz Fords gin
· 1 ½ oz Honeydew-basil white balsamic shrub
· Prosecco, to float
· Lemon wedge, to rim glass
· Basil salt(chopped fresh basil combined with coarse salt), to rim glass
Steps
1. Rub the lemon wedge on half of the outside of a couple glass, coat with the basil salt mixture and set aside.
2. Add the gin and syrup to a cocktail shaker with ice and shake until chilled
3. Double-strain into the prepared coupe glass
4. Float the chilled prosecco on top
3.Bit of Tongue
The Bit of Tongue is an original cocktail from spirits pro Nic Christiansen. She created the drink while working as the beverage director at Lola in Louisville, Kentucky. It starts with bittersweet Aperol adding absinthe, grapefruit shrub and sparkling wine to the mix.
Ingredients
· 1-ounce Aperol
· 1 teaspoon Copper & Kings Absinthe Superior.
· ¾ ounce grapefruit shrub
· Cava, chilled, to top
· Garnish: Orange twist.
Steps
1. Add the Aperol, absinthe and grapefruit shrub into a shaker with ice and shake until well-chilled.
2. Strain into a chilled flute, and top with the cava.

4.Figurati
Figurati is an Italian name which was founded by bartender Nathan Elliot which means “don’t worry about it” It is an easy build-in the glass recipe cocktail with a low ABV. Unlike many sparkling wine cocktails, the Figurati doesn’t use Champagne, prosecco or any other white, or even rose, sparkling wine. Instead, uses Lambrusco, and the famed Italian sparkler from Lombardy proves to be just the ticket for the base.

· 4 ounces Lambrusco, chilled

Steps
1. Add the Lambrusco, Cappelletti and Peychaud’s bitters into a Champagne flute, stirring gently to combine.
